What is Curry?
Curry is a fragrant dish that people all over the world enjoy. It's made with a mix of spices, herbs, and other ingredients, which can vary depending on where it's from. A great thing about curry dishes is they're often nutritious! Lots of curry dishes have veggies in them, which give you vitamins, minerals, and other healthy plant compounds. Curry dishes often also have legumes like lentils or chickpeas, which are high in protein and fiber. The spices in curry, like turmeric and ginger, are also said to have antioxidants and anti-inflammatory properties.
Why eat Lentils?

Chickpea & Lentil Curry Recipe
What you'll need

2 cups brown rice

1 sweet potato
-
1 cup red lentils

1 can coconut milk
-
1 can chickpeas
-
1 small bag frozen vegetables

1 sweet onion
-
2 tbsp curry
-
salt and pepper

optional lemon
How to prepare

Add 2 cups washed rice to a rice cooker with 4 cups water, and cook.

Heat a pan on your stove. While that's heating, chop and dice your onion, then add to the pan.

Wash and chop your sweet potato into cubes, then add to your pan.

Drain and rinse your chickpeas, add to your pan.

Add 2 tbsp curry and a pinch of salt and pepper to your curry, mix, and cook until fragrant (about 2 minutes).

Rinse your lentils until the water runs clear, then add to your pan with your small bag of vegetables, 1 can of coconut milk, refill the can with water and add that, then mix everything until combined.

Once your curry comes to a boil, reduce the heat to low, cover with a lid, and cook for 20 minutes without touching.

Pair it with your brown rice and a squeeze of lemon!
